Breakfast, Penn Style

Yesterday, I got out of bed after hearing my first alarm and walked towards spruce street. I was early for math, but my true mission had nothing to do with numbers. I had just read Amanda Shulman’s post on Penn Appetit about an exceptional breakfast sandwich from Lyn’s, a food truck right outside lower quad gate (and my class). I walked up to the truck and ordered, “Egg whites, spinach, and provolone on whole wheat.” They went to work. The husband-wife team that runs Lyn’s quickly and carefully constructed my sandwich, toasting the bread on the grill, cracking the eggs in one layer, topping with cheese, adding the final trimmings of sriracha, salt, pepper and a tiny squirt of ketchup before wrapping it in foil and delivering the price: $2.75.

The sandwich combined relatively healthy ingredients with the food cart preparation, leaving me full and satisfied but not stuffed. The flavors were sharp and distinct, the sriracha adding much needed spice. The bread did not get soggy and was perfectly toasted.

So come to Penn for our summit. We have incredible breakfast.
